Prawn broth

Method


  1. Bring the chicken stock to a simmer in a medium saucepan.

  2. Add the soy sauce, spring onions, chilli flakes and carrot and simmer for five minutes.

  3. Add the prawns and simmer for a further five minutes, then season, to taste, with salt and freshly ground black pepper.

  4. To serve, pour the broth into a bowl and drizzle over the sesame oil.

Ingredients

  • 300ml/10½fl oz hot chicken stock
  • 1 tsp soy sauce
  • 1 spring onion, finely chopped
  • pinch dried chilli flakes
  • ½ carrot, finely chopped
  • 3 uncooked tiger prawns, peeled
  • salt and freshly ground black pepper
  • 1 tsp sesame oil
