Method

Place the shredded lettuce into the bottom of two stemmed glasses.

In a bowl, mash the avocado with the lemon juice and season with salt, to taste. Spoon over the lettuce, then add the cubed cucumber and shelled prawns and drizzle over the mayonnaise.

To serve, dust with paprika and garnish with a slice of lemon.

- 1 Little Gem lettuce, leaves only, shredded
- 1 avocado
- ½ lemon, juice only
- salt, to taste
- 4 tbsp de-seeded and cubed cucumber
- 250g/9oz small cooked and peeled prawns
- 100ml/3½fl oz mayonnaise
- paprika, for garnish
- 2 slices lemon, for garnish
