Potato salad with cottage cheese dressing

Method


  1. Boil the potatoes in a saucepan of boiling, salted water for ten minutes, or until just tender. Drain and place in a bowl.

  2. For the dressing, in a small bowl mix together the Greek-style yoghurt, cottage cheese and wholegrain mustard. Season with salt and freshly ground black pepper.

  3. To serve, mix the cottage cheese mixture with the potatoes and serve warm.

  • 150g/5½oz baby new potatoes

  • 6 tbsp Greek-style yoghurt
  • 3 tbsp cottage cheese
  • 2 tbsp wholegrain mustard
  • salt and freshly ground black pepper
