Potato curry

Method

Heat the oil in a pan and sauté the onion for 2-3 minutes, to soften. Add the potato and heat for a further few minutes.

Add the coriander seeds, turmeric, cardamom pods and sugar and stir together.

Pour in the vinegar and reduce the heat and simmer for 10-12 minutes, until the potato is tender.

Spoon into a serving dish and serve with a dollop of yoghurt.
Ingredients
- 1 tbsp olive oil
- ½ onion, peeled and diced
- ½ sweet potato, peeled and diced
- few coriander seeds
- pinch of dried turmeric
- few cardamom pods, crushed
- 1 tbsp sugar
- splash of red wine vinegar
