Posh steak sandwich with spinach and tofu dressing

Method


  1. For the sandwich, rub the steak with olive oil and season, to taste, with salt and freshly ground black pepper.

  2. Heat a griddle pan until smoking hot, add the steak and cook for two minutes on each side. Add an extra minute cooking time if you prefer a well done steak.

  3. Place a slice of ciabatta onto a serving plate, spread with tomato sauce, place the steak on top and arrange the spinach leaves on top of the steak.

  4. For the dressing, place all the ingredients into a small blender and blend until smooth.

  5. To serve, pour the dressing over the spinach leaves in the burger and top with the other slice of griddled ciabatta.

For the sandwich

  • 200g/7oz rib-eye steak
  • 1 tbsp olive oil
  • salt and freshly ground black pepper
  • 2 slices griddled ciabatta
  • small handful spinach leaves
  • tomato ketchup, to serve

For the spinach and tofu dressing

  • 2 tbsp silken tofu
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • small handful each fresh basil, coriander, parsley
  • 1 garlic clove, peeled, chopped
  • 85g/3oz spinach
