Pork and yam stir fry with basmati rice

Method

Heat the oil in a frying pan. Add the pork and cook until golden-brown on all sides.

Add the yam, onion and chilli, season and cook for a further three minutes.

Add the chopped tomato, soy sauce and garlic, mix well and cook for two minutes.

Add the bean sprouts and cook for one minute. Stir in the coriander

To serve, place the basmati rice onto a clean plate. Place the pork and yam stir fry on top and garnish with the sesame seeds and the coriander leaves.
Ingredients
- 1 tbsp vegetable oil
- 100g/3½oz pork fillet, cut into thin strips
- 75g/2½oz yam, peeled and chopped
- ½ onion, sliced
- ½ fresh chilli, chopped
- 1 tomato, chopped
- 1 tbsp soy sauce
- 1 garlic clove, finely chopped
- handful bean sprouts
- handful fresh coriander, chopped
- 100g/3½oz basmati rice, cooked according to packet instructions
To serve
- 1 tbsp sesame seeds
- fresh coriander leaves to garnish
