Porcini bread and butter pudding

  1. Preheat the oven to 200C/400F/Gas 6.

  2. Layer the bread in a small oven dish, greased with butter.

  3. Place the shallot, eggs, double cream and porcini into a bowl and mix together. Pour the cream mixture over the bread.

  4. Place the Pecorino on top of the bread and place into the oven to bake for 12 minutes, or until golden and cooked through.

  5. Remove from the oven and serve garnished with the chopped dill.


  • 5 slices ciabatta, crusts removed
  • butter, for greasing
  • ½ shallot, finely sliced
  • 3 free-range eggs
  • 55ml/2fl oz double cream
  • 25g/1oz dried porcini, rehydrated in warm water and finely chopped
  • 50g/2oz Pecorino, sliced
  • 2 tsp chopped fresh dill
