For the poached pears, place the wine, vanilla seeds and cherry juice into a pan over a medium heat and bring to a simmer.
Add the pear and poach for ten minutes, until softened.
For the chocolate sauce, place the chocolate and double cream into a heat-safe bowl, placed over a saucepan of just simmering water. Heat, stirring occasionally until the chocolate has completely melted into the cream.
To serve, place the poached pear onto a plate and spoon over the chocolate sauce. Sprinkle with the sesame seeds to finish.
