Poached pears with chocolate sauce

Method


  1. For the poached pears, place the wine, vanilla seeds and cherry juice into a pan over a medium heat and bring to a simmer.

  2. Add the pear and poach for ten minutes, until softened.

  3. For the chocolate sauce, place the chocolate and double cream into a heat-safe bowl, placed over a saucepan of just simmering water. Heat, stirring occasionally until the chocolate has completely melted into the cream.

  4. To serve, place the poached pear onto a plate and spoon over the chocolate sauce. Sprinkle with the sesame seeds to finish.

Ingredients

  • 255ml/9fl oz white wine
  • 1 vanilla pod, seeds scraped out
  • 50ml/2fl oz cherry juice from a tin of cherries
  • 1 pear, peeled

For the chocolate sauce

  • 100g/3½oz dark chocolate
  • 150ml/5½fl oz double cream

To garnish

  • 1 tbsp sesame seeds
