Heat the oven to 250C/500F/Gas 9.
Place the peaches, brandy, a splash of water and sugar in an oven-proof frying pan and place in the hot oven.
Bake for ten minutes.
Remove from the oven and set the peaches aside leaving the syrup in the pan.
Place on a hob at a high heat and add the butter and cream and reduce for 1-2 minutes.
Pour the sauce over the peaches and serve.
