Place the flour in a bowl. Make a well in the centre, add the yeast mixed to a paste with water, olive oil, salt, pepper, egg and hot water. Mix together until it resembles chewing gum.
Knead on a floured surface for about 3 minutes until the dough no longer sticks to your hands.
Shape the dough into a ball, cover with a bowl and allow to stand for 30 minutes.
Oil a baking sheet and preheat oven to 250C/500F/Gas 9.
Knead again. Pick up dough, flatten with your fingers into a large round.
Place dough on baking sheet. With oiled fingers, spread it out to form a 30cm/12in diameter round. The edge should be thicker than the centre.
Spread with tomatoes. Sprinkle with capers, slices of mozzarella cheese, black olive halves, oregano leaves and garlic. Season with pepper, sprinkle with oil and bake in the oven for 20 minutes.
