Method

Place all the ingredients except the sponge fingers into a bowl and mix together.

Spoon the mixture into a tall glass on a plate with the sponge fingers served alongside.

- 75ml/3fl oz whipped cream
- 75ml/3fl oz mascarpone
- 75g/3oz pistachio nuts, finely chopped
- 2 tbsp icing sugar
- 1 orange, juice and zest only
- 3 ready-made sponge fingers, to serve
