Pineapple 'carpaccio' with cardamom syrup

Method


  1. Place the pineapple slices around a large plate in a fan shape and set aside.

  2. In a saucepan, heat the sugar, water and cardamom and bring to the boil, then reduce the heat to simmer for 4-5 minutes to thicken the syrup.

  3. To serve, pour the syrup over the pineapple and top with a dollop of cream.

  • ½ pineapple, peeled and thinly sliced
  • 25g/1oz caster sugar
  • 100ml/3½fl oz water
  • 3 cardomom pods, crushed
  • whipped cream, to serve
