Pears poached in red wine and rosemary with Northumberland cheese

Method

Heat the wine and sugar in a pan until the sugar dissolves.

Add the pear pieces and the rosemary and simmer for 10-15 minutes, or until the pears are soft and the sauce has thickened.

To serve, place a spoonful of the sauce onto a serving plate and top with the pears and the cheese.

- 150ml/¼ pint red wine
- 85g/3oz caster sugar
- 1 pear, peeled, cored and quartered
- sprig fresh rosemary
- 55g/2oz Northumberland cheese, crumbled, to serve
