Pan-fried peppered goats' cheese with raspberry dressing

Method

Heat the olive oil in a griddle pan.

Sprinkle the flour onto a plate and coat the goats' cheese in the flour. Season with salt and freshly ground black pepper, to taste.

Griddle the goats' cheese for three minutes on each side until just melting.

For the dressing, place all the dressing ingredients into a pan and warm over a low heat.

To serve, arrange the chervil and parsley leaves on a plate and drizzle over the olive oil. Place the goats' cheese on top, then pour over the warm dressing.

For the goats' cheese
- 1 tbsp olive oil
- 1 tbsp plain flour
- 75g/2½oz slice peppered goats' cheese
- salt and freshly ground black pepper
For the dressing
- 2 tbsp balsamic vinegar
- ½ orange, juice only
- 2 tbsp maple syrup
- 55g/2oz raspberries
To serve
- small bunch chervil
- small bunch parsley leaves
- 1 tbsp olive oil
