Oysters with a coriander and passion fruit relish

Carefully open the oysters using an oyster shucker and place on a serving plate.

Place all the remaining ingredients, except the lime wedges, into a small bowl and mix well.

To serve, pour the relish over the oysters and garnish with lime wedges.
Ingredients
- 3 rock oysters
- 1 lemon, juice only
- 1 lime, juice only
- 150ml/¼ pint olive oil
- 1 passion fruit, pulp scraped out
- 1 tsp chilli flakes
- 1 shallot, finely chopped
- small handful fresh coriander, finely chopped
- 1 lime, cut into wedges, to serve
