These high-protein pies are delicious hot or cold. Try them as a quick breakfast on-the-go.

Method


  1. Preheat the oven to 200C/400F/Gas 6. Grease six holes of a muffin tray with vegetable oil.

  2. Beat the egg and ricotta together in a bowl until smooth. Stir in the leek and bacon.

  3. Divide the mixture between the muffin holes and bake in the oven for 30 minutes or until just cooked through.

  • vegetable oil, for greasing
  • 1 free-range egg
  • 150g/5½ oz ricotta
  • 25g/1oz leek, finely sliced
  • 1 large rasher cooked bacon, chopped
