For the marinated feta, stick cocktail sticks into each cube of feta. Put the lemon juice, olive oil, chilli flakes, salt and freshly ground black pepper freshly ground black pepper into a bowl, add the feta and leave to marinate for 6-8 minutes, or longer if possible.
To make the panzanella, heat a splash of olive oil in a frying pan, add the torn bread and fry until golden and crisp. Put the fried bread into a large bowl and add the rest of the panzanella ingredients. Mix well and leave to marinate for 6-8 minutes, or more if time permits.
Serve the marinated feta with the panzanella.
