Mango skewers with yoghurt

Method


  1. Preheat the oven to 220C/428F/Gas 7.

  2. Heat vegetable oil in a large pan for deep frying. (CAUTION: hot oil can be dangerous. Do not leave unattended).

  3. Deep-fry the tortilla strips for 3-4 minutes or until crisp and golden. Remove from the oil with a slotted spoon and drain on kitchen paper.

  4. Thread the mango cubes onto a skewer and sprinkle with icing sugar. Bake in the oven for ten minutes.

  5. To serve, arrange the mango skewer on top of the tortilla crisps and dust with icing sugar.

  • vegetable oil for deep frying
  • 1 tortilla, cut into strips
  • ½ mango, cut into 2cm/1in dice
  • 4 tbsp honey
  • icing sugar
