Preheat the oven to 220C/428F/Gas 7.
Heat vegetable oil in a large pan for deep frying. (CAUTION: hot oil can be dangerous. Do not leave unattended).
Deep-fry the tortilla strips for 3-4 minutes or until crisp and golden. Remove from the oil with a slotted spoon and drain on kitchen paper.
Thread the mango cubes onto a skewer and sprinkle with icing sugar. Bake in the oven for ten minutes.
To serve, arrange the mango skewer on top of the tortilla crisps and dust with icing sugar.
