Method

Put the caster sugar, cardamom pods and water in a pan. Stir over a gentle heat until the sugar has dissolved.

Take off the heat and allow to cool before adding the lime zest. Mix and pour over the pineapple chunks or rings.
Ingredients
- 225g/8oz caster sugar
- 8 green cardamom pods, seeds removed and crushed
- 150ml/5¼fl oz water
- 150ml/5¼fl oz lime juice
- 1 tbsp grated lime zest or to taste
To serve
- pineapple chunks or rings
