Lime and coconut rice pudding

Method

Place the coconut milk into a pan with the lime zest, vanilla pod and seeds and the sugar. Bring to the boil, then reduce the heat and simmer for five minutes. Discard the vanilla pod.

Add the rice to the pan and stir well.

To serve, place the rice pudding into a serving bowl and garnish with the mint.

- 100ml/3½fl oz coconut milk
- 2 limes, zest only
- 1 vanilla pod, seeds scraped out
- 50g/2oz caster sugar
- 100g/3½oz cooked basmati rice
- sprig fresh mint, to garnish
