Lay the tuna slices onto a serving plate.

Mix the orange juice and lemon juice together in a bowl and then pour over the tuna.

Season with salt and freshly ground black pepper. Drizzle with olive oil. Scatter over the sliced kalamata olives and spring onion and serve.

- 100g/3½oz good-quality tuna steak, sliced thinly
- ½ lemon, juice only
- ½ orange, juice only

- 1 tbsp kalamata olives, pitted and sliced
- 1 spring onion, chopped
