Leek and lamb koftas

Method

Preheat the oven to 200C/400F/Gas 6.

Mix together all of the ingredients thoroughly and mould around three skewers.

Heat the oil in a frying pan and cook the lamb skewers for 1-2 minutes to seal on all sides.

Place into the oven for ten minutes, until golden and cooked through.

Serve with a herb salad.
Ingredients
- 250g/8¾oz lamb mince
- ½ leek, chopped
- handful breadcrumbs
- ½ tsp paprika
- ½ tsp chilli flakes
- ½ tsp ginger
- 1 free-range egg yolk
- 1 tbsp oil
- herb salad, to serve
