Method

Boil the potatoes until just cooked.

Make up a simple viniagrette using 3 parts oil to 1 part vinegar.

Add the onions, garlic, herbs and seasoning.

Drain the potatoes and whilst they are still hot, tip them into the dressing. Stir well and serve.
Ingredients
- 2-3 large potatoes, cut into cubes olive oil
- wine vinegar
- medium sized onion, chopped
- 1-2 cloves garlic, crushed
- handful fresh herbs, chopped
- salt and pepper
