Honey-glazed coriander carrots

Method

Bring a saucepan of water to the boil and blanch the carrots for 3-4 minutes, then drain.

Heat the butter in a small frying pan and add the carrots and honey. Sauté for 2-3 minutes, until the carrots are glazed.

To serve, stir in the coriander.

- 1 bunch baby carrots, washed and trimmed
- 1 tbsp butter
- 1 tbsp honey
- 1 tbsp chopped fresh coriander, to serve
