Preheat the oven to 200C/400F/Gas 6.
For the honey and sesame-roasted carrots, place the oil, honey and sesame seeds into a bowl and mix well. Place the carrots into the bowl and stir to coat.
Place the carrots onto a baking sheet and roast in the oven for 15 minutes, or until lightly browned.
For the raita, place the yoghurt and mint into a small bowl, season, to taste, with salt and freshly ground black pepper and mix well.
To serve, place the honey and sesame-roasted carrots onto a plate with the bowl of raita alongside.
