Halibut and tomato skewers

Method


  1. Thread the halibut cubes and cherry tomatoes onto bamboo skewers.

  2. Heat a griddle pan over a high heat. Drizzle the halibut skewers with the olive oil and griddle for 3-5 minutes, or until cooked through.

  3. Transfer the skewers onto a serving plate, scatter over the chopped basil and drizzle with the vinegar.

Ingredients

  • 3 cherry tomatoes
  • 100g/3½oz halibut, cut into cubes
  • 1 tbsp olive oil, plus extran for drizzling
  • 4-5 basil leaves, chopped, to serve
  • 1 tsp balsamic vinegar, to serve
