In a large bowl whisk together the egg yolk, shallot and vinegar. Gradually add the oil while whisking to create a thick emulsion, and then season, to taste, with salt and freshly ground black pepper.

Add the beans to the dressing and mix together.

To serve, pile the beans high on a plate.

- 1 free-range egg yolk
- ½ shallot, finely chopped
- ½tsp white wine vinegar
- 50ml/2fl oz olive oil
- 100g/3½oz green beans, blanched, refreshed
- salt and freshly ground black pepper
