Green bean, red pepper and brazil nut salad

Method


  1. Place the green beans into a steamer and steam for 4-5 minutes, until tender. Transfer to a bowl, add the rest of the salad ingredients and season to taste with salt and freshly ground black pepper. Stir well to combine.

  2. Spoon into a serving bowl and serve.

Ingredients

  • 75g/2½oz green beans, topped and tailed
  • 1 red pepper, sliced
  • 2 tbsp chopped fresh coriander
  • 2 tsp sesame seeds, toasted
  • 30g/1oz brazil nuts, chopped
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • salt and freshly ground black pepper
