Greek salad

  1. Place all of the ingredients into a large bowl. Toss together well and serve immediately.


  • 2 handfuls fresh flatleaf parsley leaves, roughly chopped
  • 2 celery stalks, finely chopped
  • 3 tomatoes, deseeded and chopped
  • 100g/3½oz feta, cut into cubes
  • 2 tbsp tinned cannellini beans, rinsed and drained
  • 1 lemon, juice only
  • 1 tbsp olive oil
  • 2 tbsp black olives, pitted
