Fried strawberries with whipped cream and mint

Method


  1. Heat one tablespoon of the oil in a non-reactive frying pan over a medium heat, add the strawberries, caster sugar and vanilla pod, and cook for 2-3 minutes.

  2. Add the wine vinegar and turn up the heat. Cook for 2-3 minutes to reduce, then stir in the remaining tablespoon of oil. Remove the vanilla pod.

  3. To serve, mix the whipped cream and fresh mint in a serving bowl. Serve the strawberries on the side.

Ingredients

  • 2 tbsp olive oil
  • 150g/5½oz strawberries, hulls removed
  • 1 tbsp caster sugar
  • 1 vanilla pod, split
  • 1 tbsp red wine vinegar
  • 100ml/3½fl oz double cream, whipped until soft peaks form when the whisk is removed
  • 2 tbsp chopped fresh mint
