Fried halloumi with courgette and bean salad
Prep time less than 30 mins
Cook time less than 30 mins
Using a peeler, peel the courgette into thin 'ribbons' for the salad. Place into a bowl.
Add the coriander, mixed beans, lemon juice and olive oil and toss well. Season to taste with salt and freshly ground black pepper.
In a small frying pan with a little oil add the slices of halloumi and cook for 20 seconds on each side.
Serve the courgette and bean salad on a plate and place the fried halloumi on top.
- 1 courgette
- 1 handful red Peppadew peppers
- 1 handful fresh coriander, chopped
- 1 handful tinned mixed beans, rinsed and drained
- juice of ½ lemon
- 3 tbsp olive oil
- salt and freshly ground black pepper
- tsp olive oil
- 3 slices halloumi cheese
