Fried baby pineapple with mint and cream

Method


  1. Melt the butter in a frying pan and lightly fry the pineapple slices on both sides for 3-4 minutes, or until they start to colour.

  2. Transfer the pineapple slices onto a servin g plate, spoon over the double cream and garnish with fresh mint and a wedge of lemon.

Ingredients

  • 25g/1oz butter
  • 1 baby pineapple, skin cut off, halved and sliced
  • 75ml/2½fl oz double cream
  • 1 sprig fresh mint
  • 1 lemon wedge, to serve
