Fried baby pineapple with mint and cream

Melt the butter in a frying pan and lightly fry the pineapple slices on both sides for 3-4 minutes, or until they start to colour.

Transfer the pineapple slices onto a servin g plate, spoon over the double cream and garnish with fresh mint and a wedge of lemon.

- 25g/1oz butter
- 1 baby pineapple, skin cut off, halved and sliced
- 75ml/2½fl oz double cream
- 1 sprig fresh mint
- 1 lemon wedge, to serve
