Fresh pea and mint soup

Heat the oil and butter in a frying pan and fry the onion and garlic until softened but not coloured.

Add the peas and stock and bring to a gentle simmer. Cook until the peas are tender, about 5-8 minutes.

Remove from the heat. Stir in the fresh mint and blend until smooth with a hand blender. Serve in a bowl garnished with a drizzle of olive oil.

- 1 tbsp olive oil, plus extra to serve
- 25g/1oz butter
- ½ onion, finely chopped
- 1 garlic clove, finely chopped
- 100g/3½oz fresh peas
- 200ml/7fl oz vegetable stock
- 2 tbsp chopped fresh mint
