Preheat oven to 200C/400F/Gas 6.
Brush the filo pastry sheets with butter and dust with the icing sugar. Scrunch and place onto a baking trays.
Place into a pre-heated oven for three minutes.
Take out and leave to cool for a few minutes.
Place the filo pastry onto a plate and drizzle with honey, then cover with the chopped apricots and pistachios. Finally sprinkle them with the sesame seeds.
