Figs and prosciutto with balsamic dressing

Method


  1. Preheat the oven to 180C/350F/Gas 4.

  2. Using a sharp knife, carefully cut a cross into the top of each fig and squeeze the base of each fig until they open out slightly.

  3. Stuff each fig with a slice of prosciutto and drizzle with olive oil and balsamic vinegar. Season, to taste, with salt and freshly ground black pepper.

  4. Place on a baking sheet and roast in the oven for five minutes, or until the figs are warmed through and the prosciutto is crisp.

  5. To serve, place the figs onto a serving plate and serve with toast.

  • 2 figs, stalks removed
  • 2 slices prosciutto
  • olive oil, for drizzling
  • 1 tbsp balsamic vinegar
  • salt and freshly ground black pepper
  • 2 slices toasted bread, to serve
