Eton mess with berry coulis

Method


  1. Place the whipped double cream, cornflakes and two tablespoons of the mixed berries into a large bowl and mix together well.

  2. Spoon half of the cream mixture into a tall glass.

  3. To make the coulis, place the mixed berries, lime juice and icing sugar into a small food processor and blend until smooth.

  4. Pass the berry mixture through a fine sieve.

  5. Spoon two tablespoons of the coulis over the cream mixture in the glass.

  6. Spoon the rest of the cream mixture into the glass, then drizzle with another spoonful of coulis.

  7. To serve, decorate with the remaining one tablespoon of mixed berries and a sprig of mint.

Ingredients

For the Eton mess

  • 150ml/¼ pt double cream, whipped until soft peaks form
  • 75g/2½oz cornflakes
  • 3 tbsp frozen mixed berries, defrosted
  • sprig fresh mint

For the berry coulis

  • 100g/3½oz frozen mixed berries, defrosted
  • 1 lime, juice only
  • 1 tbsp icing sugar
