Drop scones with butterscotch sauce

Method


  1. For the scones, mix together all of the scone ingredients except for the butter. Bring together to make a dough. Divide into six pieces and shape into rounds.

  2. Melt the butter in a frying pan over a high heat. Add the scone rounds to the pan and fry for one minute on each side or until risen and golden. Transfer to a plate.

  3. Meanwhile, to make the sauce, heat the double cream in small pan. Add the butter, caster sugar and honey and cook for five minutes over a high heat.

  4. Drizzle the hot cream mixture over the scones and serve.

Ingredients

For the drop scones

  • 150g/5½oz self-raising flour
  • 55ml/2fl oz milk
  • 2 free-range eggs
  • 55g/2oz caster sugar
  • 1 tbsp mixed spice
  • knob of butter

For the butterscotch sauce

  • 55ml/2fl oz double cream
  • 55g/2oz butter
  • 55g/2oz caster sugar
  • 1 tbsp honey
