Cucumber ribbon salad with olive and caper dressing

Place all of the ingredients except the cucumber in a food processor and pulse until smooth.
Place the cucumber ribbons into a bowl and drizzle over the dressing. Toss well to coat then transfer to a plate to serve.
- 2 red peppers from a jar
- 1 tbsp black olives
- 2 tbsp capers, drained
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- ½ lemon, juice only
- 2 tbsp chopped fresh parsley
- ½ cucumber, de-seeded and cut into ribbons with a peeler
