Chocolate hazelnut pudding

Method

Melt the chocolate with the cream in a small pan then leave to cool for a few minutes.

Whisk together the egg yolks and icing sugar.

Pour this into the chocolate mixture and continue to whisk until light and fluffy.

Stir in the brandy and hazelnuts.

Serve in a bowl or glass and top with the orange segments, if you like.

- 50g/1¾oz chocolate
- 100ml/3½fl oz double cream
- 3 free-range egg yolks
- 25g/1oz icing sugar
- splash brandy
- 50g/1¾oz hazelnuts, chopped
- fresh orange segments (optional)
