Chickpea and chorizo curry

Method

Heat the olive oil in a small saucepan, add the onion, chorizo and curry powder and sauté for 3-4 minutes or until the onions have softened.

Add the chickpeas and simmer gently for six minutes. Serve in a bowl.

- 1 tbsp olive oil
- ¼ onion, finely chopped
- 5 slices chorizo
- 1 tsp mild curry powder
- 50g/2oz tinned chickpeas, drained
