Chargrilled squid with chilli oil and salsa

To prepare the squid, cut it into three equal pieces.

Place a griddle pan on a high heat.

Coat the squid with oil and chilli flakes and season with salt and freshly ground black pepper.

Place onto the hot griddle pan. Turn off after one minute and take the squid off the heat.

To make the salsa, combine the chilli, pineapple, lemon and lime juices and the icing sugar in a medium sized bowl.

Garnish with the lettuce and place the squid on top.
Ingredients
For the squid
- 1 large tube of squid, skin scored
- 1 tbsp vegetable oil
- 1 tbsp dried chilli flakes
- salt and freshly ground black pepper
For the salsa
- 1 tbsp dried chilli flakes
- 75g/2¾oz pineapple into chunky pieces
- 1 lemon, juice only
- 1 lime, juice only
- 1 tbsp icing sugar
- 15g/½oz Drunken Lady lettuce (substitute mixed salad leaves or seasonal leaves)
- 15g/½oz Lazy Blonde lettuce (substitute mixed salad leaves or seasonal leaves)
