Carrot and watercress salad with tomatoes

Mix the carrots, watercress and tomatoes together in a bowl.
In a small bowl, whisk together the red wine vinegar and olive oil and season, to taste, with salt and freshly ground black pepper. Drizzle over the salad and toss well to coat.
- 2 carrots, peeled and grated
- 1 handful watercress, roughly chopped
- 3 mi-cuit (semi-dried) tomatoes, in oil, cut in half
- 1 tbsp red wine vinegar
- 3 tbsp olive oil
- salt and freshly ground black pepper
