Caramelised apple pan bake with cream

Method


  1. Preheat the oven to 220C/425F/Gas 7.

  2. For the caramelised apple, melt the butter in an ovenproof frying pan and add the chopped apple. Stir well, then sprinkle over the sugar and cook for 2-3 minutes, until lightly caramelised.

  3. Meanwhile, for the batter, place all the batter ingredients into a food processor and blend to form a smooth batter.

  4. Spoon the batter over the caramelised apples in the pan. Transfer to the oven and bake for 12-15 minutes, until well risen and golden-brown.

  5. Dust generously with icing sugar. Serve hot with a jug of cream on the side.

Ingredients

For the caramelised apple

  • 55g/2oz butter
  • 2 apples, peeled, cored and chopped
  • 55g/2oz caster sugar

For the batter

  • 120g/4oz butter
  • 120g/4oz caster sugar
  • 115g/4oz self-raising flour
  • 1 free-range egg
  • 1 tbsp milk
  • squeeze of lemon juice

To serve

  • icing sugar
  • single or double cream
