'Brandade'

Method


  1. Place all of the ingredients, except the chervil leaf, into a food processor and blend to a purée.

  2. To serve, place into a small bowl and garnish with the chervil leaf.

Ingredients

  • 2 tbsp olive oil
  • 1 clove garlic
  • 15g/½oz chervil
  • 100g/3½oz potato, peeled, chopped and boiled until soft
  • 50g/1¾oz haddock, poached and flaked
  • salt and freshly ground black pepper, to taste
  • chervil leaf, to garnish
