Blackcurrant and ginger cheesecake

Method

Place two chefs' rings onto plates. Divide the crushed biscuits between the two rings and top with half the blackcurrants.

Place the cream cheese, lemon juice, cream, caster sugar and ginger into a bowl and mix well. Divide the mixture between the rings. Top with the remaining blackcurrants.

To serve, remove the chefs' rings and drizzle over the reserved blackcurrant juice.

- 4 ready-made honey and oat biscuits, crushed
- 100g/3½oz tinned blackcurrants, drained, juice reserved
- 100g/3½oz cream cheese
- ½ lemon, juice only
- 6 tbsp double cream
- 5 tbsp caster sugar
- 2 pieces stem ginger, finely chopped
