Preheat the oven to 200C/400F/Gas 6.
For the baklava, place a sheet of filo pastry onto a baking sheet and brush with melted butter. Top with another sheet and brush with butter again.
Sprinkle half the sugar, ginger, orange and fig over the pastry. Place two more sheets of pastry on top, brushing with butter in between. Sprinkle over the remaining sugar, ginger, orange and fig and top with the last two sheets of pastry, each brushed with butter.
Transfer to the oven and bake for ten minutes, or until golden-brown.
For the sauce, place the cream, brown sugar and butter into a saucepan and simmer for five minutes, or until reduced.
To serve, place the baklava onto a plate and pour over the sauce.
