Baked scallops

  1. Preheat the grill to its highest setting.

  2. Place the scallops onto a baking sheet, top with the melted butter, chilli and breadcrumbs and season with salt and freshly ground black pepper.

  3. Place the tray under the grill and cook for 3-4 minutes, or until golden-brown.

  4. To serve, place the scallops onto a plate in their shells with the watercress placed alongside.


  • 2 scallops, cleaned, left in their shells
  • 25g/1oz butter, melted
  • ½ red chilli, chopped
  • 50g/1¾oz breadcrumbs
  • salt and freshly ground black pepper
  • handful watercress
