Baked apple with raisins and custard

Method


  1. Preheat the oven to 220C/425F/Gas 7.

  2. Place the butter, raisins, brown sugar and honey into a bowl and mix together.

  3. Place the apple onto a baking sheet and stuff with the butter mixture.

  4. Cook in the oven for eight minutes.

  5. For the custard, warm the milk and cream in a saucepan over a medium heat.

  6. Place the sugar, vanilla and eggs into a bowl and thoroughly mix together. While stirring, gradually add the creama and milk the over a low heat. Stir constantly, until the custard slightly thickens.

  7. To serve, place the apple on a serving plate and pour the hot custard around.

Ingredients

For the apple

  • 1 tbsp soft brown sugar
  • 30g/1oz butter
  • 20g/¾oz raisins
  • honey, to drizzle
  • ½ apple, cored

For the custard

  • 150ml/6fl oz milk
  • 150ml/6fl oz double cream
  • 40g/1½oz caster sugar
  • 1 tsp vanilla essence
  • 2 free-range egg yolks
