Asian-style noodle salad

Place the cooked noodles into a large bowl with the red pepper and pineapple.
In a small bowl, whisk together the olive oil, soy sauce, sesame oil, ginger and chilli flakes until well combined.
To serve, pour the dressing over the noodles and stir. Transfer to a serving bowl.
- 85g/3oz udon noodles, cooked according to packet instructions and drained
- ½ red pepper, seeds removed, chopped
- 55g/2oz fresh pineapple flesh, chopped
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 2 tsp sesame oil
- 2.5cm/1in piece root ginger, finely chopped
- ½ tsp chilli flakes
