Asian-style noodle salad

  1. Place the cooked noodles into a large bowl with the red pepper and pineapple.

  2. In a small bowl, whisk together the olive oil, soy sauce, sesame oil, ginger and chilli flakes until well combined.

  3. To serve, pour the dressing over the noodles and stir. Transfer to a serving bowl.


  • 85g/3oz udon noodles, cooked according to packet instructions and drained
  • ½ red pepper, seeds removed, chopped
  • 55g/2oz fresh pineapple flesh, chopped
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 2 tsp sesame oil
  • 2.5cm/1in piece root ginger, finely chopped
  • ½ tsp chilli flakes
