Apple, raisin and coconut porridge with spiced sugar

For the porridge, melt the butter in a saucepan, add the apple and fry gently for three minutes. Add the caster sugar and cook for one minute.

Add the raisins, oats and coconut milk and simmer for five minutes, stirring continuously. Add more coconut milk if the porridge is too thick. Spoon into a bowl.

For the spiced sugar, mix together the caster sugar, soft brown sugar, mixed spice and ground cinnamon until combined.

To serve, sprinkle the spiced sugar over the porridge.

- 25g/1oz butter
- ½ Bramley apple, peeled and chopped
- 2 tsp caster sugar
- 30g/1oz raisins
- 70g/2½oz porridge oats
- 200ml/7fl oz coconut milk
For the spiced sugar
- 1 tbsp caster sugar
- 1 tbsp soft brown sugar
- ½ tsp mixed spice
- ½ tsp ground cinnamon
